Red snapper is the fish I like to mention when a group wants steady inshore action, a hands-on style of fishing and a realistic chance at something good for the table. Around Jaco, snapper fishing is about reading bottom structure, current and depth rather than simply dragging lines across open water. I normally slow the day down, work the reef or rock carefully and let the spot tell us what is happening. It can be a strong choice for families, first-timers and anglers who prefer less offshore travel while still fishing real Costa Rica water.

Sailfish are one of the main reasons anglers choose the Central Pacific of Costa Rica. When I run offshore for sails, I am looking for blue water, temperature breaks, birds, bait and that clean edge where bites can happen quickly. The dry season is often the most requested window, but the day still depends on current reports and water conditions. A sailfish fight is fast, visual and technical: the fish jumps, the crew moves and everyone on the boat pays attention. Marlin fishing near Jaco is a different conversation. I always explain that this is a serious offshore target where time, fuel range, current lines and patience matter. A blue marlin can show up when the water has the right color and bait, but you normally want a full day because the best zone may not be close to the beach. September through December is often a strong planning window, although marlin can appear outside those months. For the guest who wants one big bite, a premium boat and the chance at a story fish, marlin is the offshore prize.

Yellowfin tuna can change the whole mood of a trip. I look for birds working, dolphins moving, bait stacked up and current edges that hold life. When tuna are feeding, the bites can be aggressive and the fight is heavy from the first run. The May through September window is often productive, but I never treat tuna like a guaranteed calendar fish. It is a conditions fish. If the ocean is alive and the boat has enough range, tuna can be one of the most exciting targets from Jaco, especially for anglers who want action and excellent fresh fish.

Mahi mahi, also called dorado, is one of the most photogenic and fun offshore fish we see from Jaco. I like searching around floating logs, debris, current seams and anything that collects bait. One bite can turn into several when the school stays close to the boat, so the crew has to stay ready. Mahi mahi are a great match for guests who want color, jumps, good eating and a more active offshore day. The best months can shift with rain, current and floating structure, so recent reports matter more than a fixed promise on the calendar.

Technique: High-speed trolling around clean offshore water and edges
Wahoo are built for speed, and I fish them with a different mindset than mahi or sailfish. When the water is clean and the edge looks right, high-speed trolling can produce the kind of strike that makes everyone turn their head. Wahoo are not always predictable, which is part of the appeal. They are sharp, fast and excellent on the table. From Jaco, I like them as a serious offshore target when the season, water and boat range line up. For guests who want a quick, violent bite and a premium fish, wahoo is worth asking about.
